Danny Mongeon takes over as head chef at Erling's Variety

Danny Mongeon, the young chef who in the last few years helmed the kitchens at the new restaurants Brut Cantina Sociale, Hooch Bourbon House and Share Freehouse, has just taken over at Erling’s Variety, the small plates restaurant at the north end of the Glebe.

Mongeon replaces Jeff Bradfield, who is leaving to become the co-chef at Social on Sussex Avenue.

In an interview, Mongeon said that he had taken a lot of time off since last November, coinciding with the arrival of his first child. He said that he wasn’t planning on returning to a full-time job but the opportunity at Erling’s came up after he began working part-time.

Mongeon, a 30-year-old Ottawa native, said that he was hoping for a long stint at Erling’s, which is within walking distance of where he lives.

I reviewed Mongeon’s efforts at Brut and Hooch, and tasted his cooking at Share, which he left not long after he helped open it. Mongeon made more than a few gastropub-style dishes that I enjoyed, including a bison tartare that was exceptional.

Regarding the shift that cooking at Erling’s will involve, Mongeon commented: “I guess you could say I’ll be refining my style a lot more than when I was younger.”

Mongeon’s new menu is to launch next Tuesday.
